By day, the 250lb single slab of wood on an antique hydraulic lift acts as a work surface for our butcher team breaking down whole animals and preparing sausages and cured meats for aging, but by night – it’s arguably the best table in the house. Chef tools of the trade abound as you and your dining companions get to experience the authenticity of a chef’s laboratory. An overhead meat rail marks the path of meat delivered directly by the farmer to our custom dry-aging cooler before landing on the very table where guests are seated.
